Meats and veggies that require higher temperatures can be seared and cooked on the removable cast iron plate in the middle, while more delicate foods can be cooked on the lower temperature elevated stainless steel frame. The raised frame also helps prevent flare-ups on your grill while cooking fatty cuts of meat.
